POLISH APPLE PANCAKES
Polish Apple Pancakes are apples dipped into pancake batter, then fried and topped with powdered sugar or a sweet syrup!
This is the type of food I like to eat for breakfast on weekends! In my family, we usually have big breakfasts when it’s the weekend. And it’s always either a Russian breakfast that consists of Russian Porridge (we call it Kasha), boiled eggs, Bleni (Crepes), Grenki, Syrniki. Or, a Middle Eastern breakfast that consists of Hummus, Mtabbal, Falafel, goat cheese, sliced tomatoes, Labaneh, Olives, Pita bread, and sweetened tea! So this weekend we decided to have a Russian (or Polish) breakfast. And while browsing through different recipes on Pinterest, I came across an apple pancake recipe and it reminded me of this lovely Polish recipe that my Mum always made and we all loved.
I don’t know Polish but someone told me that this recipe is called “racuchy z jabłkami”. It’s a traditional Polish recipe, where apples are dipped in pancake batter and fried!
What I really love about these pancakes is that they’re crispy on the outside, sweet and fluffy on the inside.

Apples are in season here, and since I’m a huge fan of pancakes, these pancakes were the best thing I’ve had for a while. If you are a fan of pancakes you NEED to try this classic pancake recipe! Ingredients
- 120 grams all-purpose flour
- 1 tbsp sugar
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 250 ml milk
- 1 tsp vegetable oil
- 5 apples peeled and thinly sliced
- Powdered sugar

Instructions
- In a bowl, combine flour, sugar, baking powder and salt.
- In another bowl, lightly beat egg; add milk and oil. Add to dry ingredients and stir until smooth.
- Fold in apples.
- Pour batter by 1/2 cupfuls onto a lightly greased hot pan and spread to form a 5 inch circle. Turn when bubbles form. Cook the second side until golden brown and apples are tender. Sprinkle with powdered sugar if desired.
Recipe Notes
The apples must be cut into thin slices, and grated apples work too.
